The Instant Pot is a great tool for quickly hard-boiling eggs. Simply add a cup of water to the Instant Pot, place your eggs on a trivet, and set it to cook on high pressure for 5 minutes.
Slice the cucumber thinly, season with a little olive oil, salt, and pepper, then place the slices in the Air Fryer basket. Air fry at 375°F for about 10-12 minutes, shaking the basket halfway through.
Add water to the Slow Cooker (enough to submerge the eggs) and set it to cook on low for 1.5-2 hours. The eggs will come out soft-boiled and ready to slice for your Egg Cucumber Salad.
Opt for firm cucumbers with smooth, bright skin. The crunchier the cucumber, the better the texture it will add to your salad.
Season your salad with fresh dill, parsley, or chives to enhance the flavor. A pinch of black pepper, garlic powder, and a squeeze of lemon juice also work wonders.
Hard-boiled eggs provide a creamy and rich element that complements the crunch of the cucumbers. Make sure to cook them until the yolks are fully set for the best texture.
A light vinaigrette made with olive oil, white wine vinegar, and a little mustard creates a perfect balance between the creamy eggs and fresh cucumbers. You can also add a touch of honey for sweetness.
For added texture and nutrition, sprinkle the salad with sunflower seeds, pumpkin seeds, or crushed walnuts. These elements add an enjoyable crunch to every bite.
This salad is best served chilled, making it a perfect option for hot summer days. You can even refrigerate it for an hour before serving to let the flavors meld together.
