Use the "Sauté" function to cook your ginger, garlic, and spices to create a flavorful base. Add your shrimp, coconut milk, and a splash of water, then switch to "Pressure Cook" mode for 3-4 minutes to infuse the flavors and cook shrimp to perfection.
Combine shrimp, coconut milk, spices, and aromatics in the slow cooker and set it to low for 2-3 hours. The slow cooking method allows the spices to blend deeply into the coconut milk, resulting in tender shrimp and rich, flavorful curry.
Marinate the shrimp in coconut milk and spices, then air fry them at 370°F for 8-10 minutes. After air frying, create the curry base on your stovetop or induction cooker and combine the crispy shrimp for a delicious contrast of textures.
Opt for large, fresh shrimp with the heads and shells on, which will impart flavor to the curry. However, cleaning and deveining the shrimp can be a time-consuming process.
The curry should be rich and creamy but not too thick or watery. Be mindful of how much coconut milk you use and adjust the seasoning and spices accordingly.
