Although the slow cooker isn’t ideal for baking, you can use it to melt the butter and golden syrup for the biscuit dough. Afterward, shape your dough and bake the biscuits in a conventional oven. Alternatively, cook the dough in the slow cooker on "Low" for a chewy, cookie-like texture.
Use the Instant Pot’s "Saute" function to melt the butter and syrup, then mix in your dry ingredients. You can "bake" the biscuits using the "Yogurt" or "Bake" function (if available), or steam them in the Instant Pot on low pressure. For crispier biscuits, transfer them to a hot oven or air fryer for a few minutes.
Preheat your air fryer to 350°F, then shape your ANZAC biscuit dough into small rounds. Place them in the air fryer basket and cook for 8-10 minutes, checking halfway through. The air fryer will ensure a golden, crispy exterior and a soft center.
Anzac biscuits are known for their distinct texture, crispy on the outside and chewy in the middle. Achieving this balance can be a challenge. Ensure your measurements are accurate, and don't overmix the dough to prevent toughness.
Traditional Anzac biscuits use rolled oats, desiccated coconut, and golden syrup. Make sure you use the right type of oats, quick oats can change the texture and may result in a drier biscuit. Stick to the original ingredients for an authentic flavor.
If you can't find golden syrup, you can substitute it with honey or maple syrup. Keep in mind that the flavor may be slightly different, but it will still add the necessary sweetness and sticky texture to the biscuits.
Anzac biscuits tend to spread during baking, so it's important to leave enough space between each cookie on the baking sheet. Allow room for expansion to avoid the biscuits merging into each other.
Determine the perfect baking time based on your desired texture. For softer, chewier biscuits, reduce the baking time. For crisper biscuits, extend the baking time slightly.
