Ingredients
8 oz dried udon noodles
4 cups water
1/4 cup soy sauce
1 tablespoon mirin
1 tablespoon sugar
1 tablespoon vegetable oil
1 garlic clove, minced
1 teaspoon grated ginger
2 green onions, sliced thinly
Sesame seeds, for garnish (optional)
Instructions
Bring a pot of water to a boil. Add dried udon noodles to the boiling water and cook for 8-10 minutes, or until noodles are tender.
Drain the cooked udon noodles, then rinse them with cold water to stop the cooking process. Set aside.
In a small bowl, whisk together soy sauce, mirin, and sugar until sugar dissolves. Set aside.
In a large pan or wok, heat vegetable oil over medium-high heat. Add minced garlic and grated ginger, and stir-fry for 30 seconds.
Add sliced green onions to the pan and stir-fry for another 30 seconds.
Add cooked udon noodles to the pan, and stir-fry for 1-2 minutes, until the noodles are coated with the sauce and heated through.
Remove from heat and serve hot, garnished with sesame seeds if desired.
