Ingredients
4 medium potatoes, peeled and diced
1 onion, diced
2 garlic cloves, minced
2 tablespoons olive oil
Diced tomatoes (14.5 ounces)
2 cups vegetable broth
1 teaspoon dried oregano
Salt and pepper, to taste
Fresh parsley or cilantro, chopped (optional, for garnish)
Instructions
In a large pot or Dutch oven, heat olive oil on medium-high heat.
Add diced onion and minced garlic to the pot and sauté for 2-3 minutes, stirring occasionally until the onion is soft and translucent.
Add diced potatoes to the pot and sauté for another 2-3 minutes.
Pour in diced tomatoes and vegetable broth to the pot, sauté them.
Puree the soup in a blender or food processor until it's smooth and creamy.
Return the soup to the pot and heat it up again over low heat.
Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes or until the potatoes are soft and tender.
Add dried oregano, salt, and pepper to the pot, and stir to combine.
Remove the soup from the heat and let it cool for a few minutes.
Taste and adjust the seasoning as necessary.
Ladle the soup into bowls, and garnish with fresh parsley or cilantro if desired.
