Ingredients
1 cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/2 cup vegan butter, softened
1 cup honey
1/4 cup unsweetened applesauce
1 tbsp ground flaxseed
3 tbsp water
1 tsp vanilla extract
1 1/2 cups old-fashioned rolled oats
1/2 cup chopped nuts (walnuts, almonds, pecans)
Instructions
Preheat your oven to 350 degrees Fahrenheit (175 Celsius). Line a baking sheet with parchment paper.
In a medium-sized mixing bowl, whisk together the flour, baking soda, cinnamon, and salt.
In a separate mixing bowl, beat the vegan butter and honey until the mixture is smooth and creamy.
In a small bowl, whisk together the ground flaxseed and water until it forms a thick, gel-like mixture.
Add the applesauce, flaxseed mixture, and vanilla extract to the butter and honey mixture, and whisk until everything is well combined.
Pour the dry ingredients into the wet ingredients, and stir with a spatula until everything is well combined.
Gently fold in the rolled oats and chopped nuts into the batter until they are evenly distributed.
Using a cookie scoop or spoon, drop the cookie dough onto the prepared baking sheet. Leave about 2 inches of space between each cookie.
Bake for 12-15 minutes, or until the edges of the cookies are golden brown.
Cool the cookies on the baking sheet for 5 minutes, then transfer them onto a wire rack to cool completely.
