Our vegan cranberry muffins are packed with flavor and bursting with wholesome ingredients like fresh cranberries and antioxidant-rich ingredients.
Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup softened vegan butter
1 cup unsweetened applesauce
1/2 cup unsweetened almond milk (or your preferred non-dairy milk)
1 tsp vanilla extract
1 tbsp apple cider vinegar
1 cup of nuts
1 1/2 cups fresh or frozen cranberries
Instructions
Preheat your oven to 375 degrees Fahrenheit (190 Celsius). Grease a muffin tin or line with muffin liners.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate mixing bowl, beat the softened vegan butter until smooth.
Add in the applesauce, non-dairy milk, vanilla extract, and apple cider vinegar to the butter mixture, and whisk until everything is well combined.
Slowly pour the wet mixture into the dry mixture, and stir with a spatula until everything is well combined. Do not overmix.
Gently fold in the cranberries into the batter until they are evenly distributed as well add nuts of your choice.
Spoon the batter into the muffin cups, filling them about 3/4 full.
Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Cool the muffins in the tin for 5 minutes, then transfer them onto a wire rack to cool completely.
