Ingredients
1 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup soy milk or almond milk
2 tablespoons coconut oil or vegetable oil
1 teaspoon vanilla extract
Instructions
In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Whisk until well combined.
Add soy milk or almond milk, melted coconut oil or vegetable oil, and vanilla extract to the mixing bowl. Stir until well combined. The batter should be smooth and not lumpy.
Let the batter rest for 5 minutes while you preheat a non-stick skillet or griddle over medium heat.
Once the skillet or griddle is hot, use a 1/4 cup measure to scoop the batter onto the skillet or griddle.
Cook the pancakes for 2-3 minutes on one side until bubbles start to form on the surface of the batter.
Flip the pancakes and cook for an additional 1-2 minutes on the other side until golden brown.
Repeat with the remaining batter until all the pancakes are cooked.
Serve warm with your favorite vegan syrup, fruit, and plant-based butter.
