Ingredients
1 block of firm tofu
2 tablespoons olive oil
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
8 small corn tortillas
1/2 cup chopped fresh cilantro
1/2 cup diced red onion
Optional toppings: diced avocado, diced tomato, hot sauce, lime wedges
Instructions
Preheat the oven to 375°F.
Drain the firm tofu and wrap it in a clean towel or paper towel. Place it on a plate and use a heavy object (such as a pan) to press down on the tofu to remove excess moisture. Let it sit for 10-15 minutes.
Once the excess moisture has been removed, crumble the tofu into small pieces with your hands.
In a medium bowl, combine crumbled tofu, olive oil, chili powder, ground cumin, smoked paprika, salt, and black pepper. Toss until well mixed.
Spread the seasoned tofu on a baking sheet in a single layer.
Roast the tofu in the preheated oven for 10-12 minutes, or until lightly browned and crispy.
Heat the corn tortillas on a griddle or in the oven until warm.
Assemble the tacos by adding the roasted tofu, chopped cilantro, diced red onion, and any optional toppings onto each tortilla.
Serve the tofu tacos hot with lime wedges on the side.
