Ingredients
1 block of firm tofu, drained and pressed
2 tablespoons olive oil
1/2 onion, chopped
1/2 bell pepper, chopped
1 garlic clove, minced
1 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/4 teaspoon paprika powder
Salt and pepper, to taste
Green onions or fresh herbs for garnish
Instructions
Drain the firm tofu and wrap it in a clean towel or paper towel. Place it on a plate and use a heavy object (such as a pan) to press down on the tofu to remove excess moisture. Let it sit for 10-15 minutes.
Once the excess moisture has been removed, crumble the tofu into small pieces.
Heat the olive oil in a skillet over medium heat.
Add the chopped onion, bell pepper, and minced garlic and sauté until softened, about 5-7 minutes.
Add the crumbled tofu to the skillet and stir to combine with the vegetables.
Add turmeric powder, cumin, and paprika to the skillet and stir until well combined.
Season with salt and pepper to taste.
Cook the tofu scramble until the tofu is heated through and lightly browned, stirring occasionally, for about 5-7 minutes.
Garnish with chopped green onions or fresh herbs and serve hot.
