Ingredients
4-5 medium ripe tomatoes, diced
1/2 cup chopped fresh basil
2 cloves garlic, minced
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 vegan baguette, sliced into thin rounds
Optional: plant based grated parmesan cheese (for serving)
Instructions
Preheat the oven to 375°F.
In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Toss until well mixed.
Place the baguette slices on a baking sheet in a single layer.
Toast the baguette slices in the preheated oven for 5-7 minutes, or until lightly browned and crispy.
Remove the baguette slices from the oven and top each slice with a spoonful of the tomato mixture.
Optional: sprinkle grated parmesan cheese on top of each bruschetta.
Serve the bruschetta immediately as an appetizer or snack.
