Ingredients
corn tortillas
1/2 cup vegan chorizo crumbles
1/4 cup diced onion
1/4 cup chopped cilantro
1/4 avocado, sliced
1/4 lime, cut into wedges
Instructions
Heat up a non-stick skillet over medium-high heat.
Place the vegan chorizo in the pan and cook for 5-7 minutes or until it starts to brown and become crispy. Stir occasionally.
While the chorizo is cooking, prepare the toppings. Dice the onions, and cilantro. Slice the avocado, and cut the lime into wedges.
Heat the tortillas in the microwave for 10-15 seconds.
Once the chorizo is done, remove it from the pan and put it on a plate.
Place one tortilla on a plate and top it with half of the cooked chorizo, diced onions, cilantro, and slices of avocado.
Squeeze a lime wedge over the top.
