Ingredients
4 cups baby spinach
1 mango, peeled and cubed
1/2 red onion, thinly sliced
1/4 cup sliced almonds
1/4 cup dried cranberries
2 tbsp olive oil
2 tbsp orange juice
1 tbsp honey
1 tbsp white wine vinegar
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the baby spinach, cubed mango, thinly sliced red onion, sliced almonds and dried cranberries.
In a small jar, add the olive oil, orange juice, honey, white wine vinegar and salt and pepper. Close the jar and shake to combine the dressing.
Drizzle the dressing over the salad mixture and toss lightly.
Serve immediately.
