This bright and colorful salad is bursting with the flavors of fresh peaches, juicy tomatoes, and tangy goat cheese. The roasted beets add a sweet earthy note, while the pistachios add crunch. Ingredients
3 medium beets, roasted and sliced
2 ripe peaches, sliced
½ pint grape tomatoes, halved
2 cups mixed greens
½ cup crumbled goat cheese
¼ cup chopped pistachios
3 tablespoons extra-virgin olive oil
1 tablespoon honey
1 tablespoon sherry vinegar
1 tablespoon minced shallot
Salt and freshly ground pepper
Instructions
Preheat the oven to 400° F. Roast the beets for 45 minutes, or until tender. Let them cool, then peel and slice them.
In a small bowl, whisk together the olive oil, honey, vinegar, shallot and salt and pepper. Taste and adjust the seasoning as needed.
In a large bowl, combine the beets, sliced peaches, halved grape tomatoes and mixed greens. Drizzle the dressing over the top and toss gently to coat everything evenly.
Crumble the goat cheese and sprinkle it over the top of the salad. Sprinkle with chopped pistachios and serve.
