Ingredients
1 can of tuna
2 boiled eggs, sliced
1/2 cucumber, sliced
2 cups of fresh rucola
1/4 cup of chopped red onion
2 tbsp of olive oil
1 tbsp of lemon juice
Salt and pepper to taste
Instructions
Drain the tuna and place it in a large mixing bowl.
Add the boiled eggs, sliced cucumber, fresh rucola, and chopped red onion to the bowl.
In a small jar, add the olive oil, lemon juice, salt, and pepper. Close the jar and shake to combine the dressing.
Drizzle the dressing over the salad mixture and toss lightly.
Serve immediately.
