Ingredients
1 can cannellini beans, drained and rinsed
1 cup cooked pasta
2 cups chopped lettuce
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1/4 cup sliced red onion
1/4 cup chopped fresh parsley
1/2 cup sliced almonds, toasted
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp Dijon mustard
1 tbsp honey
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the cannellini beans, cooked pasta, chopped lettuce, chopped red and yellow bell peppers, sliced red onion, and chopped fresh parsley.
In a small jar, add the olive oil, lemon juice, Dijon mustard, honey, and salt and pepper. Close the jar and shake to combine the dressing.
Drizzle the dressing over the salad mixture and toss lightly.
Sprinkle the toasted sliced almonds over the salad.
Serve chilled.
