Ingredients
6 bell peppers
1 cup short-grain rice (arborio)
2 cups broth
1 onion, finely chopped
2 cloves garlic, minced
1 lb ground beef
1/2 lb ground pork
1/2 lb mushrooms, finely chopped
2 tbsp tomato paste
1 tbsp paprika
1 tsp salt
1/2 tsp black pepper
1/2 cup sour cream
1/2 cup chopped dill
1/2 cup chopped parsley
2 tbsp vegetable oil
Instructions
Preheat oven to 375°F
Cut off the tops of the peppers and remove seeds and membranes.
Rinse rice and drain well.
In a large pan, heat vegetable oil over medium heat. Add chopped onion and garlic and cook until soft.
Add ground beef and pork to the same pan, stirring frequently until browned.
Add chopped mushrooms to the pan and cook for 5 minutes.
Stir in tomato paste, paprika, salt and black pepper.
Add the rice to the pan and cook for 3 minutes stirring constantly.
Pour in broth and bring the mixture to a boil.
Reduce heat to low and simmer for 20 minutes.
Remove the pan from heat. Stir in sour cream, chopped dill and parsley.
Stuff the bell peppers with the rice and meat mixture.
Place stuffed bell peppers in a baking dish. Add some water to the dish.
Cover the dish with foil and bake in preheated oven for 40-50 minutes.
Serve hot.
