Ingredients
1/2 cup soy sauce (shoyu)
1/4 cup sake
1/4 cup mirin
2 tbsp sugar
1 knob of ginger, peeled and minced
2 cloves of garlic, minced
1 tbsp cornstarch slurry (1 tbsp cornstarch whisked with 2 tbsp water)
Instructions
Mix soy sauce, sake, mirin, sugar, ginger and garlic in a saucepan. Bring to a boil.
Reduce heat and let simmer for about 5 minutes.
Add cornstarch slurry while constantly whisking, let it simmer for another 5 minutes or until the sauce has thickened.
Remove from heat and let cool completely.
Pour marinade over the protein of your choice (chicken, beef, fish) and let sit for at least 30 minutes, ideally up to 8 hours.
Grill, bake or pan fry as desired.
Serve with rice, vegetables or as a filling for sushi rolls.
