4 cups vegetable broth

Instructions
Heat up a large pot over medium-high heat.
Add the chopped onion and garlic, and cook for 3-4 minutes or until the onion is translucent.
Add the chopped pumpkin, vegetable broth, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 30-35 minutes or until the pumpkin is soft and tender.
Remove the pot from the heat and let it cool down for a few minutes.
Using an immersion blender or a regular blender, blend the pumpkin mixture until it's smooth and creamy.
