1 cup rolled oats
1 cup plain flour
1 cup desiccated coconut
3/4 cup brown sugar
125g butter
2 tablespoons golden syrup
1/2 teaspoon bicarbonate of soda
2 tablespoons boiling water
Instructions
Preheat your oven to 160°C (320°F) and line two baking trays with baking paper.
In a large bowl, combine the rolled oats, plain flour, coconut and brown sugar.
In a small saucepan, melt together the butter and golden syrup. In a separate small bowl, dissolve the bicarbonate of soda in boiling water and add to the butter mixture.
Pour the butter mixture into the dry ingredients and stir until well combined.
Roll tablespoon-sized balls of the mixture and place on the prepared baking trays, leaving space for spreading.
Bake for 12-15 minutes or until golden brown.
Allow the biscuits to cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
