Cool off this summer with a refreshing and creamy horchata! Made with rice, cinnamon, and a blend of milk and spices, this cold drink is the perfect way to beat the heat.
Ingredients
1 cup rice
2 cinnamon sticks
4 cups water
1 cup milk
1/2 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Instructions
Rinse the rice in cold water and drain.
In a blender, grind the rice, cinnamon sticks, and 2 cups of water until finely ground.
Pour the mixture into a bowl, add the remaining water and stir well.
Let the mixture soak overnight or for at least 8 hours.
Strain the mixture through a fine mesh strainer or cheesecloth into a pitcher.
Add the milk, sugar, vanilla extract, and ground cinnamon to the pitcher and stir well.
Chill the horchata for at least 1 hour or until cold.
